Ingredients & Method:
Whiz in a food processor until it resembles cooked oatmeal
3 onions (quartered)
2 green chili peppers (chopped)
3 cloves garlic (peeled & minced) or 2 tsp. garlic powder
Fry the above with at least 4 Tablespoons sunflower oil using med heat until almost reddish in colour. Stir occasionally
It takes about 25 minutes. Add oil or water as necessary.
Add:
2 19oz cans of Chick peas, (include liquid from 1 of those cans)
and 2 tomatoes roughly chopped
and a tablespoon of tomato paste, (optional).
Prepare spices.
in a separate little pan add 1 tablespoon of oil and...
1 teaspoon each of cumin, corriander(powder), tumeric
1/2 teaspoon cinnamon, cayenne
1/3 teaspoon ground ginger
gently warm those spices and then add them to the chickpea mixture
Bring it all to a boil, then simmer covered for 30 minutes, (Stir occasionally)
Add salt to taste – start with 1/2 teaspoon.
Add parsley/fresh coriander & a little lemon juice at the end.
If sauce is too thick, add water, if too thin, crush some chick peas
