Oatmeal & Molasses Bread

pan

medium saucepan:
2 cups of water
3/4 Cup 5 minute oatmeal
Bring to a boil then turn to simmer and stir occasionally for about 5 minutes.
remove from heat.
1 Tablespoon Butter
2 teaspoon salt
1/3 Cup Molasses
stir into cereal mixture and let cool completely.
in a small glass bowl:
1 teaspoon sugar
1/2 cup lukewarm water
1 package active dry yeast
dissolve sugar in lukewarm water
Sprinkle in yeast and let stand 10 minutes until frothy
Transfer cereal mixture to a really big bowl.
Add yeast mixture to the cereal mixture.
4 1/2 cups white all purpose flour or a combination of Whole wheat and white
That's 575 grams for those with a kitchen scale
using a wooden spoon, beat in enough of the flour to make a stiff dough.
Dump dough onto a lightly floured countertop and knead until smooth, (about 7 minutes).

Place in a lightly greased bowl, turning to coat with grease all over.
Cover with a damp tea towel and let rise for 1 1/2 hours in a warm spot.
A warm spot can be created by turning on the oven for 1 minute, then turning it off, then turning on the oven light. -- It should feel like a really really warm summer day.

Punch down and turn out onto a floured countertop and knead into a smooth ball.
Cover and let rest for 10 minutes.

Divide dough in half and shape each portion into a loaf.
Bake in greased loaf pans in a 375 degree fahrenheit oven for 35 minutes.
Remove from pans and let cool on wire racks.
